The restaurant Le Saint James Bordeaux, currently under renovation, invites itself to Sturia for a saline collaboration. Until April 26 2025, La Parenthèse offers an exclusive culinary immersion at the heart of the Château Leroy-Beauval, enhancing caviar and exceptional product in an intimate setting.

Since January 30 2025, a gourmet rendez-vous was set up at Sturia, leader of french caviar. While waiting for Saint James Bordeaux’s reopening, La Parenthèse invites its haute-cuisine guests to live an extraordinary experience at the Château Leroy-Beauval. Each Thursday, Friday and Saturday evening and noon, a small crowd has the privilege of tasting a 6-course menu signed by chef Mathieu Martin. In an elegant pure wooden setting, this exceptional diner celebrates excellent products, including the Sturia caviar, undisputed star of this meeting between two exceptional institutions.

A parenthesis that should stay open

In the felted world of the Château Leroy-Beauval, at just 20 minutes away from Bordeaux, La Parenthèse embodies the bridge between the Saint James Bordeaux and the savoir-faire of Sturia. Designed as an ephemeral gastronomic short-stop, this confidential address allows gourmets to wait before the reopening of Saint James.

Every night evening, 8 tables will be offered for a refined experience, paced by a six-course menu orchestrated by Chef Mathieu Martin and his team. True to his DNA, the chef elevates the best products at hand, highlighting in particular Sturia caviar through its two exclusive creations. To go with this gustatory journey, a selection of carefully chosen wine enriches the taste for a perfect balance in the mouth.

Beyond gastronomy, La Parenthèse is an art of living. Finesse of presentation, felt atmosphere… These sought-out qualities make each dinner a moment out of time itself. With a service by reservation only, at 7:30 pm or 8:30 pm, this experience should delight epicureans in search for exception, before or after a jump in the Arcachon basin.
